Glad to read that the author has dispelled the incorrect notion that Michelin stars = pompousness. And while Tetsuya’s is indeed a benchmark for Australian restauranting, who are the Aussies kidding if they think their best chefs sufficiently match up to Michelin-rated restaurants? Honestly..
