This lovely shiny yellow sherry is young by sherry years having only been aged in old American oak solera casks for an average of 4.5 years. A delicious nose of preserved lemon, freshly cut sprouts and brine that is salivating and calls out for roasted cashews and walnuts, prunes and pork belly or a simple hommus dip. Fresh clean flavours that are tangy, salty almost sweet vegetable reduction. 15% alc. This is an entry level sherry that will appeal to a wide audience, and is a perfect palate-wetter before dinner. Heck, even lunch, why not? Its name is a tribute to Charles Darwin and the graphic on the label is a ‘Tree of Life’ doodle that was found posthumously in Darwin’s notebook. Drink now. 89/100.
